Depending on where you’re from, you may not have had the distinct pleasure of someone handing you a taco, telling you that it’s “lengua” then demanding you take a bite without further explanation. The reason for the subterfuge is apparent once you learn that lengua is beef tongue. It may sound gross, but lengua is tasty, lean and full of protein.

Looking at the name of this recipe, you can see why people prefer the name lengua. Still, the meat is good no matter what you call it, and the combined spiciness of the mustard and horseradish help your palate adjust to a new flavor and texture.
